Ramen noodle soup


Get cosy with a delicious bowl of ramen. Tuck into your warming noodle soup in just 20 minutes with this simple ramen recipe using instant noodles.


Ingredients

260g Nongshim Shin Ramyun Black instant noodles

2 cup salt-reduced chicken stock

1 tbs Amoy light soy sauce

250g pork medallions, cut into 1cm cubes

12 green banana prawns, peeled, tails left intact, deveined

1 bunch baby bok choy, halved lengthways

150g fresh shiitake mushrooms, thinly sliced

4 free range eggs

1 nori sheet, finely shredded

Directions

Step 1

Place noodle soup base sachets, stock, soy sauce and 1 litre water in a large saucepan over high heat and bring to the boil. Add pork, prawns, bok choy and mushrooms and return to the boil. Reduce heat to medium and simmer, uncovered, for 3 minutes or until pork and prawns are cooked through.

Step 2

Add noodles and cook for 2 minutes or until noodles begin to separate. Crack eggs over noodles. Simmer for 4 minutes or until egg whites are set and yolks are cooked to your liking.

Step 3

Using a slotted spoon, carefully divide eggs and noodle mixture among bowls. Serve topped with nori sheet and flakes sachet.
